Schnitzel was a well loved dish in our household growing up. I remember having it for Christmas Eve several times. Tonight I got a craving for schnitzel and decided to make it for the first time.
•4 boneless pork chops, pounded very thin
•Flour, to dredge pork chops
•2 eggs, beaten
•1- 1 1/2 cups bread crumbs
•Salt and pepper to taste
•1 teaspoon paprika
•Vegetable oil, for frying
•2 cups sour cream
•Scant Tablespoon dill seeds
•Additional paprika, if desired
Mix the bread crumbs, salt, pepper, and paprika together on a shallow plate. Place the flour and eggs on separate plates. Heat about 1/2 inch of oil in a large skillet over medium high heat. Dredge the pork chops in the flour, then the eggs, and then the bread crumbs.
Fry the pork chops in the oil, about 4 minutes on each side, until well browned and cooked all the way through.
Remove schnitzel to a dish lined with paper towels. Keep warm in the oven. Drain off almost all of the oil, leaving about a tablespoon in the pan. Turn the heat down to medium low. Add the sour cream, dill seeds, and additional paprika, if desired. Cook and stir until heated through. Serve the sauce on top of the schnitzel.
We ate our schnitzel with mashed potatoes and brussels sprouts.
